Our van has a small fridge, so we have to be choosy about what we take with us. I expect to stop at a grocery store at least twice a week while we are on the road and to eat out as little as possible.

Leaving fruit on the counter in your camper van will result in bruised fruit! A fruit hammock can be mounted away from walls so that fruit is cradled and protected while you drive; plus, giving your fruit complete air circulation allows it to breathe and encourages better ripening.
